Levels 70-80
Once you
hit level 70 (or higher) you can mine and herb at what I believe is the most profitable spot in the game for
those who do not have 310% mount training. You still cannot fly on the Isle of Quel'danas, but it does not
matter as there are quite a few spawn points for Admantite Ore and Mana Thistle, both of which are quite
valuable.
Mana
Thistle in particular seems to hold its value (30g a stack at the time of this writing) because there are so few
spawn points for it in the game. The Isle of Quel'Danas is the best place to farm it.
Note: You can get to the Isle by taking the portal in Shattrath City (if you do not have the flight path) or by
flying on the Wing Rider (if you have the flight path). Here is the gathering map:

I also like how simple the
path is to follow - the route above encompasses every possible spawn point on the island and only takes around 5
minutes to cover. However, with each full respawn you will net a stack of Adamantium and around 12 Mana
Thistle.
Not bad
at all; this spot can make those with an epic ground mount in excess of 400g an hour, depending on server
conditions of course.
Farming Locations
Once you
hit around level 75, you can always return to Outlands to farm. As mentioned in the farming guide, farming
primal air and primal water on the elemental plateau can net you 500 or more gold per hour, depending on server
prices. Just be careful not to flood the market (i.e. do not list 20+ of each primal at the same time but rather
list 3-10 each day, depending on how fast they sell).
Other Gathering
Locations
With the
release of Cataclysm, the prices for Northrend Ore will temporarily sink, and then start to climb as players
begin to clear out of Northrend. Similar things will happen with herbs.
I will
include two locations: one for Cobalt Ore and low-level Northrend Herbs (Firethorn, Goldclover, and Tiger Lily),
and one for Saronite Ore and Frost Lotus (easy to get from Adder's Tongue).
Once
players clear out of Northrend, either one may be more valuable at any given time. It will depend highly on your
individual server, so check your AH before deciding which one to farm.
Note
that Cobalt Bars often sell for more than Cobalt Ore. Cobalt Ore is rarely used for prospecting (Jewelcrafters),
while Saronite Ore is. Cobalt Bars are used by blacksmiths and engineers who need to level up, hence the
distinction here. In short, check the price on both Cobalt Ore and Bars before deciding on which to
sell.
With that said, here is the location for Cobalt Ore / Low-level Northrend Herbs:

By the time you complete 1
loop, everything should have respawned.
Saronite Ore / Adder's Tongue / Frost
Lotus: Sholazar
Basin

Now,
this may differ from some other maps and approaches you may have seen to farming Sholazar Basin. This map was
drawn to both maximize the gathering of ore and herbs, and if you are not both mining and herbalism, you should
not really be gathering at this point.
With
that said, it covers a lot more ground then you would typically see advocated. The reason for this is that
Sholazar (back when WoTLK was end-game) used to be farmed heavily, meaning you could just stick to the outside
and head to the pillars in order to get easy Saronite veins.
This is
no longer the case as most players have moved onto Cataclysm areas. In order to maximize your ore-farming
prowess, you will need to hit nearly all the node spawns to make sure that a few do not escape your notice (and
as a result slow down ore respawn times).
